I had my first experience with mangos when I was in 6th grade.  They were bought I think in bulk from a jar and were my snack food during the Olympics.  I was in love.  Then, my grandma started putting mangos in her fruit salad.  It is the best fruit salad.  Then it was mango salsa.  Mango smoothies.  Fresh mangos.  The love continued.

And this Tuesday, we come to Mango bread.  I had never heard of Mango bread before, but was thoroughly excited to give it a go!  I baked the bread using my friend’s silicon bread pan, so the clean up was easy (always a plus!).  I wrapped the bread and waited the day like I was supposed to.  So how was it, you wonder…

Well…it was good.  Not gooood, but good.  I generally like my mango creations to taste fresh and clean and spring-like, but I found the ginger in the recipe made the bread taste like….well, like winter.  So if I make this one again, I will cut way back on the ginger and maybe a little back on the cinnamon.  The texture of the bread was really good though…possibly even a little better after refrigerating a little accidentally.

    i felt the same way- good, but not gooooood. i wanted to taste more mango!

    Ginger isn’t my thing either – in fact, when I make this recipe, I usually cut out most of the ginger. I bet this would taste a lot more “summery” with extra lime zest, and no “wintery” spices. Your bread looks amazing, though! Yummy!!

    I thought it was just good the first day, but the second day the flavors really came through and I liked it a lot more! I swapped curry for the ginger which worked out great, but would have liked more lime flavor too.

    Your bread looks excellent. . . sorry you didn’t like it that much. For people who love ginger, it was absolutely great! Nice job.

    It looks great! I also thought “winter” when I saw the spices in the recipe. Maybe some different spices could make this more summery.

    I dunno – the crispy bits on my muffins made this one goooood. But then again, I wasn’t expecting tons from the mango, and I love spice breads. Yours looks awesome though!
